The Indian Desire....




Baked Rosogolla
Preparation Time : 6minutes. Portions:4 nos.

Ingredients :
Tinned Rossogolla : 8 nos.
Condensed Milk : 250 ml.
Egg : 2 (whites) not the yolks please...
Sugar : 2 Tsp.
Saffron : 2 pinch.
Cherries : For Garnishing.
Nutmeg Powder: 1 Pinch.
Method :

Arrange the Rosogollas neatly in a well greased baking tray.

  • Mix the saffron strands in the condensed milk.
  • Pour this mixture evenly on the rosogollas.
  • They will be partly covered in this mixture.
  • Beat the eggwhites,nutmeg powder and sugar up to a stiff consistency ( Known also as an Italian Meringue). Pour this over the baking tray.
  • Now Bake in the oven for about 3minutes and put under the grill for about 1/2 a minute.
This Golden Delight is sure to win anybody's heart...specially ur warm little darlings'.

Homemade Chocolates.
Preparation Time : 15 mins.
IngredientsBitter Chocolate Bar : 500gms
Sugar : 500gms
Almond and Cashewnut : 200 gms( baked and roughly grounded)
Butter : 50gms(optional)
Milk : 30ml.
Water : 50ml.
Silver paper : for wrapping.
Method:
Roughly Chop the Chocolate bar into small pieces and place them in a bowl.
Add the water, sugar and butter and place them in the oven or the cooking range on simmer till the chocolate melts into a smooth tight paste.
Add small dashes of milk from time to time if necessary.
Add the baked and roughly grounded assorted nuts.Mix well.
Divide into small balls and arrange them in tray.
Refrigerate till hard.
Cover with silver wrappers one by one.
A gooey sweet surprise for your bundle of mischiefs...

RING-a-RING-a ROSES....A MOUTHFULL OF HAPPINESS...




INDIAN COOKIES WITH HONEY....
Preparation Time : 10 mins. Portions : 4 nos.
Flour : 1 cup.
Egg white / yoghurt : 2 egg whites / 2tbsp.yoghurt.
Sugar : 1 cup (finely powdered)
Butter / White oil : 3/4 th. cup.
Grated Coconut Powder : 2 Tbsp.
Honey : 2 Tbsp.
Nutmeg Powder : 1 pinch.
Baking Powder : 1/2 tbsp
Method:
  • Cream the butter , sugar , and egg whites (or beaten yoghurt) together.

  • Sieve together the baking , flour, and nutmeg powder
  • Fold in the flour mixture gently in a cut and fold manner in the mixture.
  • Divide into small balls and roll them in coconut powder.
  • Arrange them in a microwave proof tray and cook on high for 1-2 minutes (not more). More cooking would burn the cookies from the heart.
  • Allow to cool.
  • Serve with honey beaten up with finely chopped almonds as a special dip.

  • A GOOD IDEA TO TRICK THE KIDS INTO SOMETHING HEALTHY!!!


DINER'S DELIGHT......







STUFFED CAPSICUM WITH FRESHLY GRATED COTTAGE CHEESE.
Preparation Time- (includes arranging and cooking time):15 minutes. Portions:2nos.
INGREDIENTS:
Capsicum : 4 Nos.( de-seeded without slicing)
Cottage Cheese / Paneer : 50 gms.
Salt and Pepper : to taste.
Mono-sodium glucamate: a pinch.
Grated Cheese : for topping.
Garlic : 2 cloves finely chopped.
Red Chillies : 1 small de-seeded and finely chopped.
Tomato Puree : 2 Tbsp.
Parsley : few sprigs finely chopped.
White oil / Butter : 1 Tbsp.
METHOD :

  • Heat oil / butter in a wok (Chinese flat frying pan).
  • Add the chopped garlic and red chilly and fry till golden brown.
  • Add the tomato pureeand cook for 1/2 a minute. Add the salt, pepper and chopped parsley. Toss and remove from fire.
  • Add the grated cottage cheese and mix well with a wooden spoon.
  • Divide into 4 equal portions and stuff this filling into the capsicum casing.
  • Top with grated cheese and bake in a microwave oven for 2 mins.
  • Garnish with parsley sprigs and serve with mustard sauce.

MEALS IN A JIFFY...(a special treat for working MOMS!!!)




Lightly Peppered Meat Loaf with rounded croutons...( Portions:2)
Chicken: 100gms minced breast of chicken.
Egg : 1nos.
Flour : for sprinkling.
Salt : to Taste
Capsicum/ Bell Pepper: 1 whole chopped finely
Ginger& Garlic Paste: 1Tsp.
Onion : Chopped 1 Tbsp.
Pepper : To Taste
Sugar : 1/2 tsp.
Nutmeg : 1 pinch
Cilantro/ Coriander : finely chopped 2 tsp.
Bread : 4 Slices cut into roundals.
Method : Mix all ingredients and place in slightly buttered microwave-proof bowl.
Cook on full power for 9 mins. Allow to cool and empty bowl on a slightly greased tray and Hey Presto!!!! your sumptuous meat loaf is ready. Serve hot with Hard toasted Bread roundels.
