STUFFED CAPSICUM WITH FRESHLY GRATED COTTAGE CHEESE.
Preparation Time- (includes arranging and cooking time):15 minutes. Portions:2nos.
INGREDIENTS:
Capsicum : 4 Nos.( de-seeded without slicing)
Cottage Cheese / Paneer : 50 gms.
Salt and Pepper : to taste.
Mono-sodium glucamate: a pinch.
Grated Cheese : for topping.
Garlic : 2 cloves finely chopped.
Red Chillies : 1 small de-seeded and finely chopped.
Tomato Puree : 2 Tbsp.
Parsley : few sprigs finely chopped.
White oil / Butter : 1 Tbsp.
METHOD :

METHOD :
- Heat oil / butter in a wok (Chinese flat frying pan).
- Add the chopped garlic and red chilly and fry till golden brown.
- Add the tomato pureeand cook for 1/2 a minute. Add the salt, pepper and chopped parsley. Toss and remove from fire.
- Add the grated cottage cheese and mix well with a wooden spoon.
- Divide into 4 equal portions and stuff this filling into the capsicum casing.
- Top with grated cheese and bake in a microwave oven for 2 mins.
- Garnish with parsley sprigs and serve with mustard sauce.
