Muffins

Muffins : An ideal Serving with The Evening Tea





INGREDIENTS  :                   Serves:4

Apples-diced-  2 
Refined flour (maida)-  2 cups  
Powdered sugar -1/2 cup  
Baking powder -1 teaspoons 
Salt -1/2 teaspoon  
Milk -1 cup 
Eggs beaten-2  
Butter, melted-  1/4 cup  
Almonds, blanched and slivered 2 tablespoons METHOD:-  
Preheat the oven at 180C/350F. 
Grease the muffin moulds. 
Sift the flour along with sugar, baking powder and salt in a bowl. 
Combine milk, eggs and butter and beat lightly. 
Add this mixture to the flour mixture and fold lightly. 
Add the diced apples and mix gently. 
Pour into muffin moulds. 
Sprinkle the almond flakes on top. 
Bake in the preheated oven for twenty five to thirty minutes till golden brown.
OR Microwave for 6 mins.
Demould and serve.

Ice-Cream- Rich and Pure



Rich Irish Ice cream



Ingredients:                                                        
                                                       Serves: 4

Sugar-4Tbsp
Full Cream-1 Tea Cup
Condensed milk- 4Tbsp


Vanilla essence- A few dashes
Chocolate chips -For Garnishing

Method:-
  • Pour the Cream in a deep container. Place the container in another container with an icebath.
  • Whisk till it is frothy.
  • Pour icing sugar from time to time to avoid lump formation.
  • Whisk till the volu,me doubles and soft peaks form.
  • Add in Condensed milk
  • Whisk till it blends with the rick foamy cream.
  • Pour/ Pipe it in dessert bowls.
  • Add the chocolate chips
  • Refrigertae for an hour or 6more.
Note: Do not whisk for long durations as it will start curdling.
This is an icecream base which can be used to make any other ice-cream.

Fresh Marshmallows with Piping Hot Chocolate

For the Marshmallows:

Preparation time : 30 mins Serves: 4

Ingredients:

Gelatin 1 TSP
Water 3 TSP
Sugar 1 TEACUP
Water 1 TEACUP
VANILLA ESSENCE :A DASH

Method:-

  • Add 3 TSP Water to 1TSP gelatin. Let the mixture stand for a few minutes till it thickens.
  • In a bowl, add  1 Teacup water and simmer
  • Add 1 Teacup sugar and mix till the granules dissolves.
  • To the sugar syrup add the gelatin mixture and stir till it dissolves into a smooth mixture.
  • Stop stirring and Allow to simmer till 240 degrees farenheit. 
  • Take the mixture away from heat and whip till foamy and the foam reaches triple its size.
  • Spread on a tray dusted with icing sugar. Allow to set and cool.
  • Flip and dust icing sugar.
  • Cut it in little bite sized chunks.
For the Hot Chocolate:-


Preparation time : 10 mins Serves: 4


Ingredients:

Milk : 1 Litre
Cornflour: 2 Tsp
Dark Chocolate : 250 gms
Water:- 2Tsp

Method:
  • Melt chocolate
  • Mix Cornflour in 1 cup cold milk and allow to stand
  • Boil the Milk
  • Add the Melted chocolate and Mix till it becomes smooth and dark
  • Add the cornflour mix and allow to simmer and thicken.
  • Take away from heat
  • Pour into glasses and top with Homemade Marshmallows
